A hearty combination of Spiced Mung bean stew, Salty Sweet Potato Moons, Dill Cauliflower, Avocado & Toasted Sesame.

A meal doesn’t need to have a thousand ingredients to be nourishing, satisfying and delicious. From an Ayurvedic perspective, simple is better, as digestion doesn’t have so much to do with- well.. digesting it. So if you’re noticing that something is not right with your digestion, its always better to keep it simple, whilst still getting all the nutrients you need. Mung beans are a fantastic legume. They give you bang for buck in regards to nutrients (bang) and ease of digestion (buck). Not to mention they’re inexpensive (another buck!). Bang for buck buck…

Anyway, they are one of the easiest legumes to digest (if they’re well cooked and spiced VS sprouted & eaten cold) whilst being one of the most nutrient dense legumes. Try subbing a few meals per week with mung beans and your digestion will thank you. Just make sure they’re soaked first for at least 6 hrs, cooked with spices and good quality oils to aid digestion (always a good idea with ANY legume) and enjoy these beauties. A pressure cooker works wonders by the way! Make sure you get a stainless steel insert bowl over the non-stick.

Serve with your grain-bread of choice to create a complete protein (wholewheat chapati would be my recommendation) and sit down, no distractions, chew well and savour.
